Ginisang Ampalaya (Stir Fried Bittermelon)

Bittermelon is the main ingredient of this delicious and healthy dish. This is a perfect meal if you want to lower down your sugar levels! Quick and Easy that does not require a lot of ingredients! There are different ways to cook this dish, but here is how I do it! Rubbing and Soaking the bittermelon will help get rid of the bitter taste of the ampalaya, and adding eggs in the end will compliment the bitterness of the dish. Ingredients & Measurements:
1 tbsp Oil
1 medium onion (chopped)
1 medium tomatoes (chopped)
1 lb ground beef
4-5 pcs ampalaya (bittermelon) cut
1 tsp salt (cooking)
5 tbsp salt (rubbing)
2 tsp pepper
2 tsp garlic powder
1/2 beef cube (OPTIONAL)
2 tbsp fish sauce
4 large eggs
Method:
In a hot pan with oil, add onions, cook for about 1 minute
Add tomatoes and cook for another 1 minute
Add ground beef and cook for 5 mins or until brown
Add salt, garlic powder, pepper, and beef cube
Let it simmer for another 5 mins
Then ADD the bittermelon and add fish sauce
Cook for another 5 mins or until ampalaya is tender
Finally add eggs and cook for 2 minutes
Serve and Enjoy!
