Ginisang Ampalaya (Stir Fried Bittermelon)

Bittermelon is the main ingredient of this delicious and healthy dish. This is a perfect meal if you want to lower down your sugar levels! Quick and Easy that does not require a lot of ingredients! There are different ways to cook this dish, but here is how I do it! Rubbing and Soaking the bittermelon will help get rid of the bitter taste of the ampalaya, and adding eggs in the end will compliment the bitterness of the dish. Ingredients & Measurements:

  • 1 tbsp Oil

  • 1 medium onion (chopped)

  • 1 medium tomatoes (chopped)

  • 1 lb ground beef

  • 4-5 pcs ampalaya (bittermelon) cut

  • 1 tsp salt (cooking)

  • 5 tbsp salt (rubbing)

  • 2 tsp pepper

  • 2 tsp garlic powder

  • 1/2 beef cube (OPTIONAL)

  • 2 tbsp fish sauce

  • 4 large eggs


Method:

  1. In a hot pan with oil, add onions, cook for about 1 minute

  2. Add tomatoes and cook for another 1 minute

  3. Add ground beef and cook for 5 mins or until brown

  4. Add salt, garlic powder, pepper, and beef cube

  5. Let it simmer for another 5 mins

  6. Then ADD the bittermelon and add fish sauce

  7. Cook for another 5 mins or until ampalaya is tender

  8. Finally add eggs and cook for 2 minutes

  9. Serve and Enjoy!
